classic sweet potato casserole

I found this recipe around 2006 and its been a big hit for Thanksgiving and Christmas. Though my husband prefers it for dessert rather then a side dish.

Ingredients
- 6 medium sweet potatoes
- 1/4 cup sugar( optional)
- 1/2 cup milk
- 1/2 cup plus 2 tbsp butter. melted and divided
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon salt
- 1/2 cup light brown sugar
- 3 tablespoons all-purpose flour
- 1/2 cup chopped walnuts or pecans
- 14 large marshmallows cut crosswise
How To Make classic sweet potato casserole

Step 1Pierce potatoes with fork. Cook on high in microwave until tender, turning once, about 8 minutes per side. Cut open; cool. Spoon potato flesh into bowl; mash until smooth. Measure 3 cups mashed potatoes.

Step 2Preheat oven to 350 degrees F. Coat 11/7 baking dish with nonstick cooking spray; set aside. ( I typically use the disposable baking dishes instead.)

Step 3Combine mashed sweet potatoes, granulated sugar, milk, 1/3 cup butter, eggs, vanilla and salt in medium bowl; stir to mix well. Spoon into prepared dish.

Step 4Combine brown sugar and flour in small bowl; stir to mix well. Sprinkle over sweet potato mixture. Sprinkle with nuts; drizzle with remaining 2 tablespoons of butter. Bake 20 minutes.

Step 5Remove from Oven and arrange marshmallow. Bake for another 10 minutes or until the marshmallows are golden brown.
