i created this first scalloped potatoes recipe,filled with pork chorizo sausages,it's very good with fried chicken and green peas.

Ingredients For chorizo scalloped potatoes?

  • 1 Tbsp
    avocado oil
  • 2 lb
    pork chorizo sausages,casing removed and crumbled
  • 1
    medium red onion,peeled and diced
  • 3 Tbsp
    all purpose flour
  • 2 c
    heavy cream
  • 1 Tbsp
    sea salt/black pepper
  • 1 tsp
    garlic powder
  • 1/2 c
    grated parmesan cheese
  • 2 lb
    russet potatoes,rinsed and scrubbed clean
  • 2 c
    shredded extra sharp cheddar cheese

How To Make chorizo scalloped potatoes?

    Preheat oven to 400 degrees F.Coat a 9x9 baking dish with cooking spray.

    Heat avocado oil in a medium saucepan over medium heat.Add crumbled chorizo sausages and diced red onion,cook for 5 minutes until the sausages are browned,reduced to low heat.

    Use a slotted spoon to removed sausage mixture out of saucepan and transfer to a large plate and set aside.

    Add flour in sausage drippings over medium-low heat.Whisk together to form a roux,cook for 2 minutes.Stir in heavy cream,sea salt/black pepper, garlic powder and parmesan cheese.

    Bring roux to a simmer and let thickened about 2 to 3 minutes.Remove from heat.

    Peel potatoes and thinly slice each potato crosswise into thin coins.

    Spoon a thin layer of sauce into the bottom of a baking dish.Add single layer of sausage mixture on top.

    Add single layer of potatoes over the sausage mixture.Spoon more sauce over the potatoes and sausage mixture and top with shredded extra sharp cheddar cheese.Repeat layers for 3 times.

    Bake at 400 for 25 minutes or until golden brown.Cool completely.
