i created this first scalloped potatoes recipe,filled with pork chorizo sausages,it's very good with fried chicken and green peas.

1 Tbspavocado oil

2 lbpork chorizo sausages,casing removed and crumbled

1medium red onion,peeled and diced

3 Tbspall purpose flour
-
2 cheavy cream
-
1 Tbspsea salt/black pepper
-
1 tspgarlic powder
-
1/2 cgrated parmesan cheese
-
2 lbrusset potatoes,rinsed and scrubbed clean
-
2 cshredded extra sharp cheddar cheese
How To Make chorizo scalloped potatoes?

1Preheat oven to 400 degrees F.Coat a 9x9 baking dish with cooking spray.

2Heat avocado oil in a medium saucepan over medium heat.Add crumbled chorizo sausages and diced red onion,cook for 5 minutes until the sausages are browned,reduced to low heat.

3Use a slotted spoon to removed sausage mixture out of saucepan and transfer to a large plate and set aside.

4Add flour in sausage drippings over medium-low heat.Whisk together to form a roux,cook for 2 minutes.Stir in heavy cream,sea salt/black pepper, garlic powder and parmesan cheese.

5Bring roux to a simmer and let thickened about 2 to 3 minutes.Remove from heat.

6Peel potatoes and thinly slice each potato crosswise into thin coins.

7Spoon a thin layer of sauce into the bottom of a baking dish.Add single layer of sausage mixture on top.

8Add single layer of potatoes over the sausage mixture.Spoon more sauce over the potatoes and sausage mixture and top with shredded extra sharp cheddar cheese.Repeat layers for 3 times.

9Bake at 400 for 25 minutes or until golden brown.Cool completely.
