chorizo scalloped potatoes
I created this scalloped potatoes recipe filled with pork chorizo sausage. It's very good with fried chicken and green peas.

Ingredients
- 1 tablespoon avocado oil
- 2 pounds pork chorizo sausages, casing removed and crumbled
- 1 medium red onion, peeled and diced
- 3 tablespoons all purpose flour
- 2 cups heavy cream
- 1 tablespoon sea salt mixed with black pepper
- 1 teaspoon garlic powder
- 1/2 cup grated Parmesan cheese
- 2 pounds russet potatoes, rinsed and scrubbed clean
- 2 cups shredded extra sharp cheddar cheese
How To Make chorizo scalloped potatoes

Step 1Preheat oven to 400 degrees F. Coat a 9x9 baking dish with cooking spray.

Step 2Heat avocado oil in a medium saucepan over medium heat. Add crumbled chorizo sausages and diced red onion; cook for 5 minutes until the sausages are browned. Reduce to low heat.

Step 3Use a slotted spoon to removed sausage mixture out of saucepan and transfer to a large plate; set aside.

Step 4Add flour to sausage drippings over medium-low heat. Whisk together to form a roux and cook for 2 minutes. Stir in heavy cream, sea salt/black pepper, garlic powder and Parmesan cheese.

Step 5Bring roux to a simmer and let thicken about 2 to 3 minutes. Remove from heat.

Step 6Peel potatoes and thinly slice each crosswise into thin coins.

Step 7Spoon a thin layer of sauce into the bottom of a baking dish. Add a single layer of sausage mixture on top.

Step 8Add a single layer of potatoes over the sausage mixture. Spoon more sauce over the potatoes and sausage mixture and top with shredded extra sharp cheddar cheese. Repeat layers 3 times.

Step 9Bake at 400 degrees F for 25 minutes or until golden brown. Cool completely.
