A couple of years ago chiptle reigned as the food trend above all others. While the trend has cooled, this recipe remains one of my favorites. Sweet potatoes, butter and chipotle. There isn't much else that needs to be said.

Ingredients

  • 2 large
    sweet potatoes, peeled and cubed
  • 2 Tbsp
    unsalted butter
  • 2
    chipotle peppers in adobo sauce, chopped
  • 1 tsp
    adobo sauce
  • 1 tsp
    salt

How to Make Chipotle Smashed Sweet Potatoes

Step-by-Step

  1. Boil cubed potatoes until fork tender.
  2. Add butter and mash just short of desired consistency.
  3. Add chopped peppers, adobo sauce and salt and continue mashing to desired consistency.
