Great recipe for left over chicken or meats, family loves it.

Ingredients

  • 2 to 3 cups shreded chicken,beff or pork
  • 1/2 cup each chopped onions,bell pepper,tomato
  • 1/2 cup fried potatoes ( small cubes)
  • 1/4 cup any kind cooking oil
  • 1 1/8 teaspoons salt and pepper or to taste, pinch of oregano
  • 2 1/2 cups shreded monterrey jack
  • 1 cup sour cream
  • 1 package flour tortillas

How To Make chimichangas

  • Step 1
    Heat non stick pan add oil,onions,bell pepper,tomato and saute, add meat and potatoes, salt and pepper turn off heat.
  • Step 2
    heat a gridle and warm tortillas fill with same amount, roll ends first then continue wraping to make a small burrito fry in hot oil, caefull not to burn,drain in brown bag,serve with sour cream, salsa and chesse.
