Chicken Sausage w/ potatoes&peppers,onions

1 lbchicken sausage
6 smallpotatoes, cut in wesges
1 mediumsweet onion sliced
1each/medium bell peppers(3 different colors)
4 clovegarlic halved
5 Tbspolive oil
1 pinchsalt and pepper
1 pinchoregano, dried
1 pinchbasil, dried
2 Tbspparsley, italian chopped
2 mediumchicken breast filets
How to Make Chicken Sausage w/ potatoes&peppers,onions
- Using a large skillet,sauté the onions,then add the garlic in three of the five tablespoons of oil followed with the assorted bell peppers.
Sauté until just tender. Remove with a slotted spoon and start searing the chicken breast.Brown the chicken on both sides,remove and slice the chicken into strips thinly,add to the peppers.
- Now you can add the two remaining tablespoons of olive oil and brown the sausage well,slicing on the bias when it's done,add to the peppers and chicken.
- For the roasted herb crusted potato,follow my recipe I have posted,add to the mixture when done. Season with the herbs and spices,toss and serve with freshly grated cheese! Enjoy!:) Keep in mind you will have to adjust the ingredients as you are using less potatoes.
