1Using a large skillet,sauté the onions,then add the garlic in three of the five tablespoons of oil followed with the assorted bell peppers.
Sauté until just tender. Remove with a slotted spoon and start searing the chicken breast.Brown the chicken on both sides,remove and slice the chicken into strips thinly,add to the peppers.
2Now you can add the two remaining tablespoons of olive oil and brown the sausage well,slicing on the bias when it's done,add to the peppers and chicken.
3For the roasted herb crusted potato,follow my recipe I have posted,add to the mixture when done. Season with the herbs and spices,toss and serve with freshly grated cheese! Enjoy!:) Keep in mind you will have to adjust the ingredients as you are using less potatoes.
