cheesy spinach potato casserole

This is another recipe I made up as I went along. I really didn't measure anything but I will try to get as close as I can. It is really good. My husband kept telling me how good it was. This is really all I need for a meal.

Ingredients

  • 4 medium potatoes, peeled and sliced
  • 1 box frozen spinach, thawed
  • 4 slices bacon, chopped in bite size pieces
  • 2 tablespoons olive oil
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 - 1 cups heavy cream or milk
  • - salt and pepper to taste
  • 1 cup plain bread crumbs
  • 1/2 stick margarine
  • 1/3 cup shredded parmesan cheese

How To Make cheesy spinach potato casserole

  • Step 1
    Preheat oven to 400 degrees. Butter an 8" baking dish. In a skillet add olive oil, heat, add bacon, cook until crisp, do not drain, when bacon is done add spinach, cook about 5 minutes. Place a layer of potatoes in baking dish, salt and pepper, top with layer of spinach, top spinach with layer of cheddar cheese. Repeat. Pour cream all over top of casserole. Bake covered with foil for about 40 minutes or until potatoes are tender. While casserole is baking, melt margarine, add bread crumbs and parmesan to margarine, mix well. When potatoes are tender top casserole with bread crumb mixture, bake uncovered about 5 minutes longer.
