I created this first scalloped potatoes recipe. It's very cheesy and bold.

Ingredients

  • 1 cup cubed process American cheese
  • 1 cup crumbled blue cheese
  • 1 tablespoon margarine
  • 1/4 cup all-purpose flour
  • 11/2 cups heavy cream
  • 3/4 cup half and half
  • 1 tablespoon steakhouse potato seasoning
  • 2 teaspoons ground black pepper
  • 4 ounces cream cheese, softened and cut into 1/2 inches
  • 1 cup shredded extra-sharp cheddar cheese, divided
  • 1 cup shredded Monterey Jack cheese, divided
  • 7 medium Yukon Gold potatoes, cut into 1/4-inch-thick slices
  • 2 medium carrot, sliced

How To Make cheesy scalloped potatoes

  • Step 1
    Preheat oven to 350 degrees F.
  • Step 2
    Coat a 13 x 9-inch baking dish with cooking spray. Add cubed American cheese and crumbled blue cheese.
  • Step 3
    Heat the margarine in a medium saucepan over medium-low heat. Gradually whisk in flour. Cook, whisking constantly, 2 minutes.
  • Step 4
    Stir in heavy cream, half and half, steakhouse potato seasoning, black pepper, and cubed cream cheese; simmer for 8 minutes until slightly thickened.
  • Step 5
    Add 1/2 cup of shredded sharp cheddar and Monterey Jack cheeses; whisk until lightly smooth.
  • Step 6
    Arrange half of the sliced Yukon Gold potatoes and half of the sliced carrots in the bottom of the prepared baking dish. Top with half of cheese sauce mixture.Repeat layers; top with remaining shredded sharp cheddar and Monterey Jack cheese
  • Step 7
    Cover with aluminum foil.
  • Step 8
    Bake at 350 degrees for 1 hour and 15 minutes. Uncover; bake an additional 20 minutes or until potatoes are tender and cheese is browned.
