Ingredients
- 1 cup cubed process American cheese
- 1 cup crumbled blue cheese
- 1 tablespoon margarine
- 1/4 cup all-purpose flour
- 11/2 cups heavy cream
- 3/4 cup half and half
- 1 tablespoon steakhouse potato seasoning
- 2 teaspoons ground black pepper
- 4 ounces cream cheese, softened and cut into 1/2 inches
- 1 cup shredded extra-sharp cheddar cheese, divided
- 1 cup shredded Monterey Jack cheese, divided
- 7 medium Yukon Gold potatoes, cut into 1/4-inch-thick slices
- 2 medium carrot, sliced
How To Make cheesy scalloped potatoes

Step 1Preheat oven to 350 degrees F.

Step 2Coat a 13 x 9-inch baking dish with cooking spray. Add cubed American cheese and crumbled blue cheese.

Step 3Heat the margarine in a medium saucepan over medium-low heat. Gradually whisk in flour. Cook, whisking constantly, 2 minutes.

Step 4Stir in heavy cream, half and half, steakhouse potato seasoning, black pepper, and cubed cream cheese; simmer for 8 minutes until slightly thickened.

Step 5Add 1/2 cup of shredded sharp cheddar and Monterey Jack cheeses; whisk until lightly smooth.

Step 6Arrange half of the sliced Yukon Gold potatoes and half of the sliced carrots in the bottom of the prepared baking dish. Top with half of cheese sauce mixture.Repeat layers; top with remaining shredded sharp cheddar and Monterey Jack cheese

Step 7Cover with aluminum foil.

Step 8Bake at 350 degrees for 1 hour and 15 minutes. Uncover; bake an additional 20 minutes or until potatoes are tender and cheese is browned.
