Ingredients
- 5 pounds potatoes
- 2 sticks butter, salted
- 8 ounces cream cheese, room temperature
- splash milk
- shredded cheddar
- to taste salt & pepper
How To Make cheesy potatoes - mccarthy style
-
Step 1Wash, cut into chunks, and boil potatoes. Time depends on how big of chunks you use. Do not boil them to mushiness, tho.
-
Step 2Drain.
-
Step 3Add all other ingredients to cooked potatoes, EXCEPT shredded cheddar. Mash everything together to a good consistency. (I like my mashed potatoes to be thick and chunky.)
-
Step 4Spread mashed potatoes in a buttered cake pan. Sprinkle with the shredded cheddar.
-
Step 5Bake in a 350 degree oven until heated thru and cheese is melted. OR Cover and store in the fridge. Bake in a 350 degree over till warmed and cheese is melted, when you want to eat it. (I have never had to do this part, so I have no idea how long.)
