The in-laws have this every holiday. It is required. It is pretty tasty, so it is understandable!

Ingredients For cheesy potatoes - mccarthy style

  • 5 lb
    potatoes
  • 2 stick
    butter, salted
  • 8 oz
    cream cheese, room temperature
  • splash
    milk
  • shredded cheddar
  • to taste
    salt & pepper

How To Make cheesy potatoes - mccarthy style

    Wash, cut into chunks, and boil potatoes. Time depends on how big of chunks you use. Do not boil them to mushiness, tho.

    Drain.

    Add all other ingredients to cooked potatoes, EXCEPT shredded cheddar. Mash everything together to a good consistency. (I like my mashed potatoes to be thick and chunky.)

    Spread mashed potatoes in a buttered cake pan. Sprinkle with the shredded cheddar.

    Bake in a 350 degree oven until heated thru and cheese is melted. OR Cover and store in the fridge. Bake in a 350 degree over till warmed and cheese is melted, when you want to eat it. (I have never had to do this part, so I have no idea how long.)
