cheesy potatoes

I got this recipe from my hubby's cousin. She was hosting a BBQ last spring and had these as a side. I don't really care for potatoes but tried them anyways, and I must say OMG they are so delicious...a must try ;)

Ingredients

  • 2 pounds frozen cubed hashbrowns
  • 16 ounces sour cream (i use a bit more)
  • 1/2 cup milk (i use a bit more)
  • 2 cups shredded cheddar cheese
  • 1 can cream of chicken soup
  • 1 stick salted butter
  • 1/2 - sweet onion (diced)
  • 1 teaspoon dried parsley flakes
  • - salt and pepper to taste

How To Make cheesy potatoes

  • Step 1
    Melt butter in skillet, add diced onion and sautee' til clear.
  • Step 2
    In large bowl whisk together the sour cream, milk, parsley flakes and soup.
  • Step 3
    Add the buttery onions (yes all of the butter)and cheese to the creamed mixture and mix well.
  • Step 4
    Now add the frozen potatoes to this creamy mixture and your almost done.
  • Step 5
    Pour into a greased or Pam sprayed 3 quart baking dish or 9.5 x 13.5 baking dish. You can add additional cheese to the top if desired.
  • Step 6
    Bake at 350 degrees for about 1 hour (depending on your oven). I mix mine about half way thru cooking. Serve as a hot, yummy side dish =)
