Ingredients
- 1 1/2 pounds sweet potatoes, skins on, cut into 1 (or regular baking potatoes)
- 1 bag - broccoli florets, frozen
- 1 bag - cauliflower, florets, frozen
- 2 sticks butter, cold
- 4 cups mozzarella cheese
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 - 16 ounces sour cream
- 2 tablespoons parsley
How To Make cheesy mashed sweet potatoes, cauliflower & broccoli

Step 1In a large pot, combine potatoes, broccoli, cauliflower with enough salted water to cover. Over high heat, bring to boil; reduce heat to medium-high. Cook until tender, about 20 minutes. Drain, reserving 1/2 C cooking water.

Step 2Meanwhile, coat 13" x 9" baking dish with cooking spray. Position broiler rack so that top of baking dish will be 4" from the heat source; preheat broiler.

Step 3Return potato mixture to pot; mash all. Stir in butter & reserved hot water. Stir in 3/4 C of cheese, salt, pepper & sour cream, mix well. Trasfer to baking dish.

Step 4Sprinkle potato mixture with the rest of cheese. Broil until browned, about 5 minutes. Let stand 10 minutes before serving. Sprinkle with parsley. Enjoy!
