I made this for Thanksgiving to try something different than just plain potatoes. It was a huge hit!

This cheesy mashed potato bake reminds us of a loaded baked potato in casserole form. They're creamy, cheesy, and full of bacon and chives for flavor. Crispy fried onions on top add a nice crunch. Make this side dish for Sunday dinner or a special occasion. They're an easy way to jazz up mashed potatoes.

Ingredients

  • 6 medium potatoes, peeled and quartered
  • 1 tablespoon salt
  • 1/4 cup butter, melted
  • 2 tablespoons chopped fresh chives
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 2 tablespoons crumbled cooked bacon, divided
  • 1/2 cup French's fried onions

How To Make cheesy mashed potato bake

  • Cook potatoes in boiling water.
    Step 1
    Place the potatoes in a 3-quart saucepan. Cover with cold water. Add 1 Tbsp salt. Bring to a boil. Cover and reduce heat. Cook for 20 minutes or until fork tender. Preheat the oven to 350 degrees F.
  • Add butter, chives, and sour cream to mashed potatoes.
    Step 2
    Drain and mash potatoes. Add butter, chives, and sour cream. Mix well.
  • Add the cheese and half of the bacon.
    Step 3

  • Spread into an 8x8 pan and bake.
