I made this for Thanksgiving to try something different than just plain potatoes. It was a huge hit!

Ingredients For cheesy mashed potato bake

  • 6 md
    potatoes, peeled and quartered
  • 1 Tbsp
    salt
  • 1/4 c
    butter, melted
  • 2 Tbsp
    chopped fresh chives
  • 1 c
    sour cream
  • 1 c
    shredded cheddar cheese
  • 2 Tbsp
    crumbled cooked bacon, divided
  • 1/2 c
    French's fried onions

How To Make cheesy mashed potato bake

    Place the potatoes in a 3-quart saucepan. Cover with cold water. Add 1 Tbsp salt. Bring to a boil. Cover and reduce heat. Cook for 20 minutes or until fork tender. Preheat the oven to 350 degrees F.

    Drain and mash potatoes. Add butter, chives, and sour cream. Mix well.

    Add the cheese and half of the bacon. Mix well.

    Spread into an 8x8 pan. Bake for 20 - 25 minutes.

    Add the fried onions and the last of the bacon bits. Bake for another 5 minutes.
