This cheesy mashed potato bake reminds us of a loaded baked potato in casserole form. They're creamy, cheesy, and full of bacon and chives for flavor. Crispy fried onions on top add a nice crunch. Ingredients
- 6 medium potatoes, peeled and quartered
- 1 tablespoon salt
- 1/4 cup butter, melted
- 2 tablespoons chopped fresh chives
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 2 tablespoons crumbled cooked bacon, divided
- 1/2 cup French's fried onions
How To Make cheesy mashed potato bake

Step 1Place the potatoes in a 3-quart saucepan. Cover with cold water. Add 1 Tbsp salt. Bring to a boil. Cover and reduce heat. Cook for 20 minutes or until fork tender. Preheat the oven to 350 degrees F.

Step 2Drain and mash potatoes. Add butter, chives, and sour cream. Mix well.

Step 3Add the cheese and half of the bacon. Mix well.

Step 4Spread into an 8x8 pan. Bake for 20 - 25 minutes.

Step 5Add the fried onions and the last of the bacon bits. Bake for another 5 minutes.
