Ingredients

  • 12 - new red potatoes
  • 2 tablespoons olive oil, extra virgin
  • 1 teaspoon sea salt & freshly cracked black pepper
  • 1/2 cup olive oil mayonnaise
  • 5-6 slices ready bacon, chopped
  • 6 ounces aged white cheddar, grated
  • 1 teaspoon seafood seasoning-to taste
  • 2 pinches thyme, dried
  • - zest of 1 lemon
  • 1/2 pound lump crab meat

How To Make cheesy crabby bacony roasted taters

  • Step 1
    Preheat oven to 375 degrees. Add olive oil, salt and pepper to a mixing bowl. Throw in potatoes and toss.
  • Step 2
    Place potatoes on a large cookie sheet and bake for 20 minutes or until fork tender.
  • Step 3
    Slice potatoes in half and scoop out the flesh. Place potato halves back on cookies sheet. Mash potatoes in a mixing bowl. Add mayo, bacon, cheese, seafood seasoning, thyme and zest. Mix well. Fold in crab meat.
  • Step 4
    Place potato mixture in potato halves and bake for 15 minutes or until cheese is ooey & gooey.
