Ingredients
- 12 - new red potatoes
- 2 tablespoons olive oil, extra virgin
- 1 teaspoon sea salt & freshly cracked black pepper
- 1/2 cup olive oil mayonnaise
- 5-6 slices ready bacon, chopped
- 6 ounces aged white cheddar, grated
- 1 teaspoon seafood seasoning-to taste
- 2 pinches thyme, dried
- - zest of 1 lemon
- 1/2 pound lump crab meat
How To Make cheesy crabby bacony roasted taters

Step 1Preheat oven to 375 degrees. Add olive oil, salt and pepper to a mixing bowl. Throw in potatoes and toss.

Step 2Place potatoes on a large cookie sheet and bake for 20 minutes or until fork tender.

Step 3Slice potatoes in half and scoop out the flesh. Place potato halves back on cookies sheet. Mash potatoes in a mixing bowl. Add mayo, bacon, cheese, seafood seasoning, thyme and zest. Mix well. Fold in crab meat.

Step 4Place potato mixture in potato halves and bake for 15 minutes or until cheese is ooey & gooey.
