- 2 packages scalloped potatoe mix
- 1 quart milk
- 4 teaspoons caraway seeds
- 2 cups shredded mozzarella cheese.

Step 1You will need a 12-14"cast iron dutch oven. In the dutch oven,cook bacon till crisp.Drain,reserve 2 table spoons of drippings. crumble bacon and set aside. in the dutch oven cook onions & mushrooms in drippings till tender.Add spinach heat through. remvoe and set aside.

Step 2in the dutch oven combine potatos and dry sauce mix from package,stir in boiling water and milk as directed on packagr Leave out butter. stir in onions,mushrooms,spinach,and caraway seed.

Step 3Bake with coals under pot & 10-12 on lid. bake for 30 min. Remove lid (carefully do not dump coals),sprinkle top with cheese replace lid . bake for 2-3 min. Let stand out of fire for 5-10 min.
