My family loves cheese and bacon... and potatoes! I prefer to make scalloped potatoes from scratch vs the boxed kind. There is so much more flavor to them. Hope your family enjoys this recipe as much as ours does.

These cheesy bacon potatoes are a great side dish recipe when in the mood for comfort food. They can be served alongside steak, roasted chicken, or baked ham during the holidays. The luxuriously creamy cheese sauce has salty, smoky, and crisp bacon mixed in. It's layered between slices of potatoes. Each bite is decadent.

Ingredients For cheesy bacon potatoes

  • 6 md
    potatoes, peeled and thinly sliced
  • 1/2 c
    chopped onion
  • 2 c
    shredded cheddar cheese
  • 1 c
    cooked and crumbled bacon (approximately 1 pound)
  • 2 c
    milk
  • 1/2 c
    half & half
  • 4 Tbsp
    all-purpose flour
  • 4 Tbsp
    butter
  • salt and pepper

How To Make cheesy bacon potatoes

  • Saute onions in butter.

    Saute chopped onions in butter until soft but not browned.
  • Flour, salt, and pepper in a bowl.

    In a small bowl, combine flour, salt, and pepper.
  • Add flour to onions.

    Stir flour mixture into onion mixture.
  • Add milk and half and half to onions.

    Add milk and half and half. Stir and cook over medium heat until the mixture starts to thicken (about 3 minutes). Turn off heat.
  • Add cheese to onions.

    Add 1 1/2 cups cheese to the sauce. Stir until melted and smooth.
  • Add potatoes and cooked bacon.

    Add sliced potatoes and bacon; stir.
  • Potato mixture poured into a baking dish.

    Pour the mixture into a casserole dish sprayed with non-stick spray.
  • Dish covered with foil and in the oven to bake.

    Cover with foil. Bake at 350 F for 35 minutes.
  • Foil removed and cheese sprinkled on top.

    Remove foil. Sprinkle the reserved 1/2 cup shredded cheese over top.
  • Melting cheese.

    Return to the oven to bake for another 30 minutes or until potatoes are soft, cheese is melted, and edges begin to brown.
  • Potatoes cooling for sauce to thicken.

    Let stand a few minutes before serving to allow the sauce to thicken.
