cheesy baked mashed potatoes

Had leftover mashed potatoes and this is what I came up with. My husband and son went nuts over this. After dinner my husband sat at the table and ate the rest of the potatoes. He told me they were super good and that he loved them!!!!!!!!!!!! I love when I can please my family with good food! Enjoy!

Ingredients

  • 3 cups leftover mashed potatoes (see note)
  • 1 3/4 cups shredded cheese, your choice i had a mixture of cheeses on hand
  • 3 - turns of the peppermill
  • 1/4 teaspoon kosher salt
  • 1 teaspoon crushed red pepper
  • 4 tablespoons sourcream
  • - french onions

How To Make cheesy baked mashed potatoes

  • Step 1
    Mix the first 6 ingredients together in a medium bowl. Spray a 2 quart casserole dish with cooking spray. Add the potato mixture and top with french onions. Place in a preheated over at 350° for 20-25 minutes or until the french onions are golden.
  • Step 2
    Note: When I make mashed potatoes I keep the skins on. But you can remove them. Your preference.
