This is a great potatoe recipe but it is not for the weight watcher. I have pulled out all the stops on this one. hope you enjoy

Ingredients

  • c
    whole milk
  • 2 tsp
    all purpose flour
  • 2-3 c
    shredded cheese
  • 1/2 tsp
    salt
  • 1/2 tsp
    mustard powder
  • CREAMY CHEESE ROUX

  • 6-7 medium
    yellow yukon potatoes/ boiled and cooled
  • 1 lb
    crumpled and fried bacon
  • 1 large
    onion, diced
  • 1 c
    shredded chedder cheese

How to Make Cheese & Bacon Potatoe Bake

Step-by-Step

  1. Creammy cheese roux
    Begin warming 1 cup of milk in sauce pan over med heat. Wisk together in mixing bowl the remaining milk 1/2 cup and flour until there are no lumpsthen wisk in the flour and milk mixture into the sauce pan of warm milk.Continue wisking gently untill the milk thickens slightly to the consistency of heavy cream 3-4 mintues. turn heat down to low and start mixing handfuls of shreeded cheese to sauce pan of mixture. Stir in salt, mustard powder. Stir until all the cheece has melted and sauce is creamy. Taste and adjust seasoning to your liking, remove from heat.
  2. Cut bacon up into small peices and fry. Spoon bacon from pan leaving pan drippings.Boil potatoes in there skin, this should be done either night before or an hr or 2 ahead. Skin potatoes and cut op into quarter peices. Toss cooked potaoes into 2 tsp of left over bacon greese. Butter a baking pan, then add cooked potaoes ,onion, bacon. Then poor over cheese roux and mix well. Preheat over to 400 and bake for 30 minutes. Remove from oven and top with one cup of shedded cheese. Goes great with anything, ham , meatloaf, chicked, whatever and enjoy
