cheddar rice potato casserole

This is so yummy. I got this recipe from a soup package and made a few changes and WahLah! I took it to a Christmas Party and it was the dish talk of the night. I had one of the ladies ask me if I would make one for her family's Christmas dinner. Wow what a compliment... Hopefully, this will soon become one of your family's favorite side dishes, or a meal all in itself as it has with mine. Enjoy!

Ingredients

  • 1 package cheddar potato soup mix (12 ounce)
  • 2 cups instant rice
  • 2 cups chopped ham, chicken, ground turkey, or sausage
  • 8 ounces chopped mushrooms (optional)
  • 2 tablespoons butter
  • 8 cups water
  • 2 cups shredded cheddar cheese
  • 1/4 cup grated parmesan cheese
  • 1/4 cup bread crumbs, buttered

How To Make cheddar rice potato casserole

  • Step 1
    In large sauce pan, mix water and soup mix with whisk until blended well. Bring to boil, reduce heat, and simmer for 10 minutes.
  • Step 2
    Add rice, mushrooms, 11/2 cups cheddar, parmesan, and ham.
  • Step 3
    Pour mixture into 9X13 buttered casserole dish. Top with the remaining 1/2 cup cheddar, Then sprinkle on bread crumbs.
  • Step 4
    Cover with foil and bake at 350 degrees for 30 minutes. Removes foil and cook an additional 10 minutes.
  • Step 5
    Remove from oven and let stand for about 10 minutes before serving.
