cheddar rice potato casserole
This is so yummy. I got this recipe from a soup package and made a few changes and WahLah! I took it to a Christmas Party and it was the dish talk of the night. I had one of the ladies ask me if I would make one for her family's Christmas dinner. Wow what a compliment... Hopefully, this will soon become one of your family's favorite side dishes, or a meal all in itself as it has with mine. Enjoy!

Ingredients
- 1 package cheddar potato soup mix (12 ounce)
- 2 cups instant rice
- 2 cups chopped ham, chicken, ground turkey, or sausage
- 8 ounces chopped mushrooms (optional)
- 2 tablespoons butter
- 8 cups water
- 2 cups shredded cheddar cheese
- 1/4 cup grated parmesan cheese
- 1/4 cup bread crumbs, buttered
How To Make cheddar rice potato casserole

Step 1In large sauce pan, mix water and soup mix with whisk until blended well. Bring to boil, reduce heat, and simmer for 10 minutes.

Step 2Add rice, mushrooms, 11/2 cups cheddar, parmesan, and ham.

Step 3Pour mixture into 9X13 buttered casserole dish. Top with the remaining 1/2 cup cheddar, Then sprinkle on bread crumbs.

Step 4Cover with foil and bake at 350 degrees for 30 minutes. Removes foil and cook an additional 10 minutes.

Step 5Remove from oven and let stand for about 10 minutes before serving.
