I am so glad I found my recipe! These are so darn good! Like a loaded baked potato but mashed! My mother in law likes mashed potatoes...maybe I will share! Lol

Ingredients
- 8 large potatoes
- 1/2 cup sour cream
- 1/3 cup margarine, softened
- 4 ounces shredded cheddar
- 1 package bacon bits (not bacos, the soft ones)
- - minced chives to taste, optional
How To Make cheddar mashed potatoes

Step 1Perl and cube potatoes, put in a pan covered with water. Cover and bring to a boil over med high heat. Cook 15-20 min or until tender. Drain and mash. Beat in sour cream until smooth and fluffy. Put into a 9x13. Sprinkle with cheese, bacon and chives. Bake at 325 degrees for 20 minutes to heat through and melt the cheese. No need to cover....
