Ingredients

  • 3 pounds red potatoes, cut into 1 1/2" chunks
  • 1 large onion, chopped
  • 1 cup milk
  • 1/2 stick butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 8 ounces cheddar cheese, shredded
  • 2 tablespoons parsley
  • 1/2 teaspoon thyme, dried

How To Make cheddar mashed potato casserole

  • Step 1
    In a large pot, combine potatoes & onion with enough salted water to cover by 1". Bring to boil over high heat; reduce heat to medium high. Cook until potatoes are tender, 20 minutes; drain. Preheat oven to 425 degrees F. Coat 1 1/2 - 2 qt baking dish with cooking spray.
  • Step 2
    Return potato mixture to same pot. In microwave safe measuring cup, microwave milk & butter on HIGH until butter is melted, 45 seconds. Add to potatoes along with salt & pepper; mash. Stir in 1/2 of cheese, parsley & thyme.
  • Step 3
    Transfer to baking dish. Sprinkle with remaining cheese. Bake 20 minutes until hot & cheese is melted. Let stan 10 minutes before serving & sprinkle with more parsley.
