This is my daughter Nicky's recipe, and it is awesome! She was tired of the usual boring pickle and egg potato salad, and this is a really nice change.

Ingredients

  • 7 cups cubed red potatoes, with skins
  • 1 small onion, chopped
  • 2 ounces precooked bacon, chopped
  • 1/4 cup fresh parsely, minced
  • 1 1/2 cups mayonnaise
  • 3/4 cup ranch dressing
  • 2 tablespoons yellow mustard
  • 4 teaspoons white vinegar
  • 1 teaspoon minced garlic
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup cheddar cheese, shredded

How To Make cheddar bacon potato salad

  • Step 1
    Cut potatoes into large bite size pieces, cover with water, and boil until just tender. Drain.
  • Step 2
    Combine potatoes, onion, parsley and bacon.
  • Step 3
    In a separate bowl, mix remaining ingredients, then add to potatoes, mixing gently to coat. Chill. Enjoy!
