Ingredients For champ

  • 1-2 lb
    yukon potatoes (i also use red skinned ones too)
  • 1 bunch
    scallions chopped (green onions)
  • 1 1/4 c
    whole milk
  • salt & pepper to taste
  • 1/2 stick
    irish butter (for serving)

How To Make champ

    Peel and cut potatoes into small chunks,Place in large enough pot with water and salt to taste, Bring to boil turn down heat and simmer till tender not mushy.Drain potatoes well and return to pot to dry out a little.In another small pot add milk and chopped scallions and bring just to boiling point turn down heat and simmer on low for 5mins.Add milk mixture to potatoes and mash or beat with electric beater till really creamy, I like to use my masher.Can serve in small bowls with a nob of butter in the center or with any meal of your choice. Enjoy! :)
