Ingredients

  • 2 pounds yucon gold potatoes peeled and cut into cubes. try to get them around the same size.
  • 4 tablespoons vegetable oil divided
  • salt

How To Make cast iron pan home fries

  • Step 1
    Once the potatoes are all peeled and cut. Boil a large pot of salted water. Place the potatoes in the water. Bring it back to a boil and boil for 5 minutes. Drain and place on paper towels to dry.
  • Step 2
    Place a cast iron pan over high heat. Add 2 tbsp oil and heat until it begins to smoke. Working in batches add the potatoes in a single layer to the pan.
  • Step 3
    Brown the potatoes on each side and sprinkle with salt. Remove the potatoes and keep warm while you add more oil and do the rest of the potatoes the same way. Serve immediately
