One of my families favorite comfort dishes. I've also added different beans to this at the end, for added hardiness. Kids aren't much into beans, so I didn't add this time, but it's an option. The paprika gives this dish a great flavor. I love taking limited ingredients, yet getting such a wonderful flavor.

Ingredients

Add to Grocery List

1 Tbsp
oil or bacon fat
1 medium
onion - chopped

of your favorite hot dogs, sliced
5 - 6 medium
potatoes - i used red - peeled and cubed
2 c
chicken broth
1/2 c
diced, green bell pepper
1 Tbsp
paprika
salt
& pepper to taste if desired

How to Make ~ Cass's Countrified Franks & Tater Skillet ~

Step-by-Step

  • 1In a cast iron skillet or a medium skillet of your choice, add fat, onions and sliced hot dogs, over medium heat cook until hot dogs are browned and onion is soft, stirring occasionally.
  • 2To the skillet add, potatoes, peppers, broth and paprika. Simmer for 30 minutes or until potatoes are tender and broth is mostly absorbed.
  • 3Serve hot with some crusty bread and maybe a side veggie.
