I have always loved fried potatoes, and this wonderful recipe really takes them up several notches! We used sweet Italian sausage and took Cassie's advice to pre cook the potatoes in the microwave. The result was simply scrumptious.

Ingredients For cassie's italian homefries

4 mdpotatoes, sliced
-
1/2 lbItalian sausage, or your favorite breakfast sausage, i have used all different meats, today i used bob evans bulk sausage

2 - 3 clovegarlic, thin sliced

1/2each - green bell pepper, red bell pepper, chopped

1/4 cfresh, chopped mushrooms (optional)

1 mdonion, chopped
-
1/2 - 1 tsponion powder
-
1/2 cshredded Italian 6 cheese blend, or whatever cheese you prefer

1/2 tsppaprika
-
pinchItalian seasoning
-
salt and pepper to taste

oil to saute...I use olive oil
How To Make cassie's italian homefries

1In a large skillet, saute the peppers, onions, garlic, mushrooms in enough oil that they won't stick. When soft and starting to brown; remove and drain on paper towel.

2In the same skillet; crumble and brown the sausage till no longer pink. Drain on paper towel.

3Add more oil to the pan add sliced potatoes, salt, pepper, paprika, italian seasoning, onion powder. (I sometimes leave the skin on the potatoes and par cook in the microwave for about 5 minutes). They cook much faster that way. And the starch makes them brown nicely.

4Continue cooking until potatoes are tender and getting brown. Add the crumbled sausage, veggies back to the skillet. Mix well.

5When potatoes are cooked, sprinkle evenly with cheese, cover till cheese is melted and serve with eggs or leave the meat out and serve as a side with whatever meats for dinner. These are good any time of the day.

6I sometimes scramble eggs and pour over top of the potatoes and mix throughout, then add the cheese and melt..Yum! Add some hot pepper flakes for a bit of kick.
