Baked potatoes should be baked between 40-60 minutes. This is a adopted recipe. I love baked potatoes,always a fast and easy meal and always filling.

Ingredients

  • 4 large baking potato
  • 2 cups carrots, scrubbed and finely diced
  • 1 cup onions, finely chopped
  • 2 teaspoons olive oil
  • 1/2 teaspoon basil
  • 1/4 cup parsley, fresh sprigs
  • - "just a pinch" of salt
  • - "just a pinch" of pepper
  • - chives, fresh/chopped

How To Make carrot-stuffed baked potatoes

  • Step 1
    Preheat oven to 400 degrees.
  • Step 2
    Scrub potatoes well, dry, pierce with fork in several places.
  • Step 3
    Set potatoes in 400 degree oven to bake.
  • Step 4
    Cook carrots and onions until tender, drain.
  • Step 5
    Remove potatoes from oven when done.
  • Step 6
    When cool enough to handle scoop out potato meat.
  • Step 7
    Mash potato meat and carrots together.
  • Step 8
    Add seasonings.
  • Step 9
    Spoon mixture back into potato shells.
  • Step 10
    Top with chives and parsley.
