Ingredients
- 4 large baking potato
- 2 cups carrots, scrubbed and finely diced
- 1 cup onions, finely chopped
- 2 teaspoons olive oil
- 1/2 teaspoon basil
- 1/4 cup parsley, fresh sprigs
- - "just a pinch" of salt
- - "just a pinch" of pepper
- - chives, fresh/chopped
How To Make carrot-stuffed baked potatoes

Step 1Preheat oven to 400 degrees.

Step 2Scrub potatoes well, dry, pierce with fork in several places.

Step 3Set potatoes in 400 degree oven to bake.

Step 4Cook carrots and onions until tender, drain.

Step 5Remove potatoes from oven when done.

Step 6When cool enough to handle scoop out potato meat.

Step 7Mash potato meat and carrots together.

Step 8Add seasonings.

Step 9Spoon mixture back into potato shells.

Step 10Top with chives and parsley.
