Baked potatoes should be baked between 40-60 minutes. This is a adopted recipe. I love baked potatoes,always a fast and easy meal and always filling.

baking potato
2 c
carrots, scrubbed and finely diced
1 c
onions, finely chopped
2 tsp
olive oil
1/2 tsp
1/4 c
parsley, fresh sprigs
"just a pinch" of salt
"just a pinch" of pepper
chives, fresh/chopped

How to Make Carrot-Stuffed Baked Potatoes


  • 1Preheat oven to 400 degrees.
  • 2Scrub potatoes well, dry, pierce with fork in several places.
  • 3Set potatoes in 400 degree oven to bake.
  • 4Cook carrots and onions until tender, drain.
  • 5Remove potatoes from oven when done.
  • 6When cool enough to handle scoop out potato meat.
  • 7Mash potato meat and carrots together.
  • 8Add seasonings.
  • 9Spoon mixture back into potato shells.
  • 10Top with chives and parsley.
