Ingredients
- CARNE ASADA
- 5 cloves garlic
- 1 large jalapeño pepper, seeded and ribs removed
- 1/2 cup cilantro
- 2 tablespoons brown sugar
- 1 tablespoon pureed chipotle in adobo
- 2 tablespoons freshly squeezed lime juice
- 1/2 tablespoon ground cumin
- 1/2 teaspoon ground Himalayan pink salt
- 1/2 teaspoon freshly ground black pepper (I always use mixed peppercorns)
- 2 tablespoons canola oil, plus more to oil the grates
- 1/4 cup freshly squeezed orange juice
- 1 pound beef round roast, flank or skirt steak
- FRIES
- 1 bag frozen fries, cooked (1 lb. 10 oz.)
- 2 1/2 cups cheddar cheese sauce
- 1 cup pico de gallo
- 4 scoops guacamole
- 4 tablespoons sour cream or crema, or to taste
- 4 large lime wedges, for garnish
How To Make carne asada fries

Step 1To make the carne asada, add all ingredients except beef to the bowl of a food processor and process until blended.

Step 2Place half the meat slices in a large bowl and pour half the marinade over it; toss well to coat.

Step 3Transfer the meat to a large re-sealable plastic bag; repeat with remaining meat slices and marinade.

Step 4Transfer the bag to the fridge and marinate for 6 to 18 hours.

Step 5Remove the bag from the fridge and bring the meat to room temperature, about 30 minutes.

Step 6Meanwhile, turn the barbecue’s temperature to 450 - 500 degrees F and oil the grates. Place the meat on the grill and cook for 1 to 1 and a half minutes per side – don’t overcook.

Step 7Remove from the heat, loosely cover with foil, and let the meat slices rest for 2 minutes before cutting them into bite-sized pieces.

Step 8To assemble the dish: Cover the bottom of a plate or bowl with the cooked French fries and top with the meat pieces. Drizzle on the cheese sauce, spoon on the Pico de Gallo, add a big scoop of guacamole, and finish with sour cream.

Step 9Garnish with lime wedges and serve immediately.
