Ingredients

  • 3 pounds Yukon Gold potatoes, peeled and cut into 2 inch pieces
  • salt
  • 4 tablespoons butter, divided
  • 1/4 cup olive oil, divided
  • 8 slices bacon, cooked crispy and chopped
  • 8 cloves garlic, minced
  • 2 tablespoons fresh thyme, minced
  • 1 tablespoon fresh rosemary, minced
  • EGG SAUCE
  • 1 cup olive oil
  • 1/2 cup ghee, warmed
  • 6 large egg yolks
  • salt
  • 3 tablespoons lemon juice
  • FOR SERVING
  • 1 cup shredded Pecorino Romano
  • fresh parsley, chopped

How To Make carbonara potatoes

  • Step 1
    Place the potatoes in cold water and add 1 1/2 Tbsp salt. Bring to a boil and reduce to a simmer, and cook for about 10 minutes or until the potatoes are fork-tender.
  • Step 2
    Reserve 1/4 cup of potato water. Strain the potatoes in a strainer and then shake the strainer back and forth to scruff up the potatoes.
  • Step 3
    Place two skillets on the stove. Divide the 1/2 cup olive oil and butter into the two skillets. Get the oil hot.
  • Step 4
    Add the potatoes in a single layer and brown on one side. Turn the potatoes over and push them to the side.
  • Step 5
    Add the bacon, garlic, thyme, and rosemary, splitting them up between the two skillets. Cook another 5 minutes. Remove from the heat.
  • Step 6
    To make the sauce, mix the olive oil and ghee in a saucepan and warm them up. Set aside.
  • Step 7
    Mix the egg yolks with the reserved potato water in a stainless-steel bowl.
  • Step 8
    Place the bowl over simmering water and whisk vigorously until it has doubled in size.
  • Step 9
    Remove it from the heat and add the salt and lemon juice. Gradually whisk in the oil/ghee mixture.
  • Step 10
    Place the sauce on a plate. Top with the potato mixture. Then sprinkle the cheese over top and let the parsley rain over top.
