The key to this potato casserole is the caramelized onions. Very flavourful. My family loved this version of scalloped potatoes.

Ingredients

  • 4 large sweet onions, thinly sliced
  • 1 cup butter, divided
  • 1/3 cup flour
  • 6 large yukon gold potatoes, thinly sliced
  • 3 cups heavy cream or half & half
  • 3 sprigs fresh rosemary
  • 1 tablespoon salt
  • 1 teaspoon ground pepper
  • 1/4 cup parmesan cheese, grated

How To Make caramelized onion scalloped potatoes

  • Step 1
Put onions and 1/2 cup of butter into a large skillet over low heat. Cook, stirring occasionally, until the onions have caramelized, approx 40 minutes.
  • Step 2
Preheat oven to 350 degrees. Coat a 9 x 13 inch baking dish with cooking spray.
  • Step 3
In a medium saucepan, melt 1/2 cup of butter. Add flour and brown lightly, stirring constantly. Add cream, salt & pepper. Stir on medium heat just until the sauce starts to thicken. Remove from heat.
  • Step 4
Place a layer of sliced potatoes on the bottom of the pan. Cover with a 1/4 of the onions. Pour 1/4 of the cream mixture over the onions. Sprinkle some of the fresh rosemary over the layer.
  • Step 5
Repeat layers 4 times. Sprinkle parmesan over the casserole and bake for 1 hour until golden brown and sauce is bubbly.
