caramelized onion mashed potatoes

Mmmmmmmmmmmmm.......... Amazing flavor. This recipe is adapted from one found in the local newspaper. These potatoes are wonderful for holiday meals and the recipe makes a BIG batch.... but they do take a while to prepare.

Ingredients

  • CARAMELIZED ONIONS:
  • 1 tablespoon butter
  • 8 cups sliced onions
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cloves garlic, minced
  • 3 tablespoons water
  • POTATOES:
  • 4 pounds yukon gold potatoes, peeled and cubed
  • 1 cup half and half
  • 6 tablespoons butter
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon nutmeg

How To Make caramelized onion mashed potatoes

  • Step 1
    In a large non-stick skillet melt 1 tablespoon butter over medium heat. Add 8 cups onions, 1 tablespoon sugar, 1/2 teaspoon salt, amd 1/4 teaspoon pepper. Cook, stirring, until onions are browned. Reduce heat a bit more add garlic and water and continue cooking and stirring until onions are caramelized, about 20 more minutes.
  • Step 2
    Cook potatoes in a large pot of boiling water for about 20 minutes until tender. Drain and return to pot. Heat half and half with butter until butter melts. Add milk mixture and salt, pepper, and nutmeg to potatoes. Mash. Stir 2/3 of caramelized onions into potatoes and mix well. Top with remaining onion mixture. Serve.
