calico potatoes
One time when we went to Silver Dollar City they had something similar to this there, but it had sausage in it. I came up with my version minus the sausage to be used as a side dish.

Ingredients
- 2 large sweet potatoes
- 2 or 3 large baking potatoes (you want about an equal amount of each type of potato)
- 1 - med or large green pepper/red pepper
- 1 large sweet onion
- 1 stick butter or marjarine
- 4 teaspoons salt (more if needed)
- 1 teaspoon pepper
How To Make calico potatoes

Step 1Peel all potatoes. In large pan fitted with a lid, melt the stick of butter/marjarine on low heat. While butter is melting, cut all potatoes into chunks (whatever your size preference, but the larger the longer to cook).

Step 2Add potatoes to melted butter and mix well to coat. Cut peppers and onion into chunks as well and add to potatoes. Again, mix to coat.

Step 3Cover pot over med/low heat to prevent scorching and stir occasionally. Test for tenderness of potatoes. Remove lid when tender to brown slightly if you wish.
