- 1 pound yucon gold potates peeled and diced
- 15 pearl onions peeled
- 1 cup frozen corn
- 1 teaspoon each salt, cajun seasoning and paprika
- 1/4 teaspoon black pepper
- 4 tablespoons melted butter
How To Make cajun roasted potatoes with pearl onions & corn

Step 1Preheat oven 350 degrees. In a shallow baking dish lay the potatoes in a single layer. Throw in the pearl onions and sprinkle the corn over top. Add the seasoning and stir.

Step 2Drizzle the butter over the potato mixture. Roast in oven for 15 to 20 minutes. Until potatoes are tender.
