  • 1 pound yucon gold potates peeled and diced
  • 15 pearl onions peeled
  • 1 cup frozen corn
  • 1 teaspoon each salt, cajun seasoning and paprika
  • 1/4 teaspoon black pepper
  • 4 tablespoons melted butter

How To Make cajun roasted potatoes with pearl onions & corn

  • Step 1
    Preheat oven 350 degrees. In a shallow baking dish lay the potatoes in a single layer. Throw in the pearl onions and sprinkle the corn over top. Add the seasoning and stir.
  • Step 2
    Drizzle the butter over the potato mixture. Roast in oven for 15 to 20 minutes. Until potatoes are tender.
