A quick and easy way to roast potatoes. They're a little spicy... adjust the Cajun seasoning to your preference (for more or less heat).

Ingredients
- 4 large baking potatoes (russets)
- 2 tablespoons butter, melted
- 2 tablespoons cajun seasoning blend (your favorite)
- 1/4 teaspoon salt
How To Make cajun oven-roasted potatoes

Step 1Preheat oven to 350°.

Step 2Peel potatoes and cut into large, even chunks (try to have all of the potato chunks the same size, for even cooking). Place in a shallow baking pan.

Step 3Pour melted butter over the potatoes and toss until well coated. Sprinkle with the Cajun seasoning and salt.

Step 4Bake, uncovered, for 45-60 minutes, or until potatoes are tender.
