Ingredients
- POTATOES
- 2 large baking russet potatoes. cleaned well
- 1 tablespoon olive oil
- salt
- 2 tablespoons butter
- CAESAR DRESSING
- 1 cup mayonnaise
- 1/2 cup grated parmesan cheerse
- 3 tablespoons lemon juice
- 6 oil packed anchovies
- 2 cloves garlic minced
- 1 teaspoon worcestershire sauce
- 1 teaspoon dijon mustard
- salt and pepper
- SALAD
- 2 cups kale chopped
- 3 cups romaine lettuce chopped
- 4 tablespoons grated parmesan
How To Make caesar salad stuffed baked potatoes

Step 1Preheat oven 425 degrees. Poke the potato skin all over with a fork. Drizzle with the olive oil and sprinkle salt. Place on a baking sheet and bake about 1 hour and 10 minutes.

Step 2Meanwhile make the dressing by placing all ingredients in a food processor and process until well incorporated. Set aside in fridge.

Step 3For the salad Mix the Kale, Romaine and Parmesan together. Once the potatoes are done cut in half and add the butter. Set them on plates. Dress the salad with some Caesar dressing and pile on top of the potato. Serve immediately
