Ingredients
- 4 medium russet potatoes
- 4 slices thick bacon
- 1-2 - jalapenos, fresh
- - handful of shredded cheese
- - salt and pepper to taste
How To Make brunch potatoes

Step 1Cut bacon into bite size pieces, and slice jalapeno's into rings. Place in skillet and cook till bacon is done. Meanwhile, wash potatoes and poke a hole in each with a knife. Place in the micro and cook for 10 min.

Step 2Remove potatoes and cut into bite size pieces. Add to bacon and jalapeno. Salt and pepper to taste. Cook on low stirring occasionally for about 10 min.

Step 3Top with shredded cheese and cilantro (opt).
