This is a great pot luck recipe. I remember my mom making it to take to church breakfast's on Sunday mornings. It was always fun to help make this. We have chickens and they lay so many eggs that we have this for dinner sometimes too. Another thing I like about this recipe is that you can kind of add anything you want to it. Including a layer of spinach if you want.

Ingredients
- 6 to 8 - potatoes, sliced
- 8 to 10 - eggs
- 1/2 cup chopped green onions (optional)
- 1/2 cup chopped green peppers (optional)
- 1/2 cup chopped celery (optional)
- 1/2 cup mushrooms diced (optional)
- 1 cup shredded cheddar cheese
- 1 package of jimmy dean sausage
- 1 dash ms. dash seasoning table blend
- 1/4 cup cream or half and half
How To Make brunch casserole

Step 1Grease bottom of 13 X 9 Baking dish. Preheat oven to 350 degrees.

Step 2Scramble eggs in a bowl with cream and set aside. Fry Potatoes and Set to the side to drain. Brown Sausage and other ingredients.

Step 3In dish layer Potatoes, Sausage mixture, Cheese. Keep layering in this manner till all ingredients are used. Pour Scrambled eggs over mixture. Bake until center is set.
