I enjoyed this type of potato cake in a restaurant and went home and created this recipe, using my mother's basic potato pancake recipe.

Ingredients
- 1 - egg
- 1/4 cup milk
- 1/4 cup flour
- 1/2 teaspoon seasoned salt
- 1/2 teaspoon regular mrs. dash
- 4 medium potatoes, grated
- 1 - stalk of brocolli flowerettes chopped and stalk grated
- 1 small onion, finely chopped
- - olive oil, your favorite kind
How To Make brocolli potato cakes

Step 1Mix together egg, milk, flour, seasoned salt, and Mrs. Dash.

Step 2Mix with potatoes, broccoli, and onion.

Step 3Heat a teaspoon of Olive Oil in a non stick frying pan.

Step 4Add the potato/broccoli mixture by the tablespoonful shaped into pancakes. Brown on each side until the potatoes and broccoli are cooked.

Step 5Remove and drain on paper towels. Keep warm until ready to serve. Serve with butter, margarine, or sour cream.
