This is a go to dinner in our family because it is so quick and easy and most importantly it is very delicious! My mom came up with the idea and we've made it over and over since then.

Ingredients

  • 1 - russet potatoes (1 per person)
  • 1 cup broccoli florets
  • 2 slices bacon
  • 1/8 cup cheddar cheese, shredded
  • 2 teaspoons butter, room temperature
  • 2 pinches salt and pepper

How To Make broccoli & bacon potatoes

  • Step 1
    Wash and poke a few holes into potato, microwave for 4 minutes. Steam broccoli. (We use frozen florets so we can also steam them in the microwave using a glass container.)
  • Step 2
    While steaming broccoli and potato in microwave, fry up bacon. Let cool then crumble.
  • Step 3
    On serving plate cut cooked potato in half and mash up the potato while keeping the skin intact. Add butter and salt and pepper.
  • Step 4
    Add broccoli on top of potato, then salt and pepper again. Add cheese and top with bacon crumbles.
  • Step 5
    Microwave for 1 minute to melt cheese. Cool for minute then serve.
