bricin's boxty
I took a trip to Ireland November 2011. I picked up this cookbook called A taste of Killarney, compiled by Jane Bergin. This recipe is from Bricin's, chef Paddy McGuire. 1/3 recipe made 8 nice sized pancakes.

Ingredients
- 3 pounds potatoes
- 1 large onion
- 3 - eggs
- - salt and pepper
- pinch nutmeg
- 3 ounces flour
How To Make bricin's boxty

Step 1Grate potatoes, place in a large piece of muslin and squeeze dry (don't squeeze potatoes too dry.)

Step 2Chop onion very fine, add to potatoes and mix well.

Step 3Beat the eggs and add the seasonings. Mix well through the 'spuds'.

Step 4Turn the griddle to 300F or heat a heavy frying pan. Using melted butter, grease the pan and drop in a little of the mix to make a tester and check for seasonings.

Step 5To make a full boxty, drop in a good spoonful and pat gently using the back of the spoon until the mix resembles a pancake. Cook gently on each side for at least 3 minutes or until golden brown and tender.

Step 6Chefs note: Boxty can be served with almost anything. As an accompaniment to a main meal or filled with fish, meat or vegetables and sauce. The Germans make a bosti that is very similar and serve it with pureed apple that is quite delicious.
