Trying to get away from the usual and less healthy white potatoes, and hash browns, I just started slicing up the Sweets and adding to it. Easy, tasty, and healthy.

How To Make
Put olive oil, Balsamic vinegar, garlic (I prefer minced garlic), and salt (if desired) in skillet or fry pan, and warm over medium heat.
Slice up sweet potatoes a little thinner than 1/4", and add to the pan, stirring occasionally, allowing them to brown somewhat. Once browned and cooked through, add the mushrooms (or not) and serve.
These go great with an omelet and/or quiche.
