Trying to get away from the usual and less healthy white potatoes, and hash browns, I just started slicing up the Sweets and adding to it. Easy, tasty, and healthy.

Ingredients

medium sweet potatoes
1/3 c
olive oil
2 Tbsp
balsamic vinegar
1/2 tsp
garlic powder
2 or 3
whole mushrooms

How to Make Breakfast Sweet Potatoes

Step-by-Step

  • 1Put olive oil, Balsamic vinegar, garlic (I prefer minced garlic), and salt (if desired) in skillet or fry pan, and warm over medium heat.
  • 2Slice up sweet potatoes a little thinner than 1/4", and add to the pan, stirring occasionally, allowing them to brown somewhat. Once browned and cooked through, add the mushrooms (or not) and serve.
  • 3These go great with an omelet and/or quiche.
