How to Make Breakfast Sweet Potatoes
- Put olive oil, Balsamic vinegar, garlic (I prefer minced garlic), and salt (if desired) in skillet or fry pan, and warm over medium heat.
- Slice up sweet potatoes a little thinner than 1/4", and add to the pan, stirring occasionally, allowing them to brown somewhat. Once browned and cooked through, add the mushrooms (or not) and serve.
- These go great with an omelet and/or quiche.
