breakfast casserole
I make this all the time and take for the people at my office. I use different vegtables all the time - mushrooms and spinach, etc. You can omit the sausage and keep it strictly veggie. Great for brunch or even a quick dinner. This is one of those recipes you can easily make your own. I hope you enjoy it as much as I do.

Ingredients
- 1 package tator tots
- 1 pound sausage
- 1 - red bell pepper chopped
- 1 - green bell pepper chopped
- 1/2 large onion chopped
- 8 - eggs
- 2 cups half & half
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 1 teaspoon brown mustard
- 1/2 teaspoon garlic powder
- 2 cups sharp cheddar cheese
How To Make breakfast casserole

Step 1Brown sausage and transfer to plate with paper towel to drain. Sauté onion, red bell pepper and green bell pepper in remaining sausage oil until crisp tender - about 3 - 5 minutes. The veggies will cook through all the way when you bake

Step 2Place tater tots in the bottom of a lightly greased baking dish. I usually sprinkle seasoned salt over the tots if they are not already seasoned. Layer sausage over the tots. Layer the onion and pepper mixture over the sausage.

Step 3In a bowl mix the eggs, half and half, salt, pepper, mustard and garlic powder - mix well. Pour the egg mixture over the tots, sausage and veggies. Cover the entire mixture with the cheese.

Step 4Allow to sit over night in the refrigerator. Bake at 350 for 45 minutes - uncovered. I allow to cool for 5 minutes before slicing and serving. I usually cover mine in salsa. Hope you enjoy!
