This is delicious and so quick and easy! Even though it is a breakfast casserole, we like to have it for dinner sometimes. It also makes an excellent brunch served with fresh fruit and croissants.

Whether you serve this easy casserole for breakfast or dinner, you will not be disappointed. Quick and easy, it's creamy, cheesy and filled with delicious smoky bacon flavor. This was gobbled up very fast in the Test Kitchen.

Ingredients

  • 1 package real bacon pieces
  • 1 cup chopped onion
  • 2 cups cheddar cheese, shredded
  • 1 1/4 cups Swiss cheese, shredded
  • 4 cups frozen hash brown potatoes, shredded
  • 1 1/2 cups small curd cottage cheese
  • 6 large eggs
  • 3 tablespoons oil
  • - salt and pepper, to taste

How To Make breakfast casserole

  • Hashbrowns and bacon cooking in a skillet.
    Step 1
    Let hash browns thaw. Preheat oven to 350 degrees. Heat oil in skillet and cook onion until tender. Add package of real bacon pieces last few minutes of cooking. Pour in a large bowl.
  • Mixing hash browns with cheeses.
    Step 2
    Add thawed hash browns to onion and bacon mixture. Add cheddar, Swiss cheese, and cottage cheese. Mix well.
  • Eggs whisked in a separate bowl.
    Step 3
    In a separate bowl, beat eggs lightly with fork. Add to mixture. Add salt and pepper to taste.
  • Casserole baking in the oven.
    Step 4
    Transfer to a 9 x 13 pan that has been sprayed with non-stick cooking spray. Bake at 350 degrees for 35 minutes.
