2 small
egg, fork beaten with a little milk
2 slice
toast, crumbled
1 slice
cheddar or processed cheese
salt and pepper to taste
garlic powder to taste

How to Make Breakfast Baked Potatoes


  • 1Scrub potatoes, but do not peel.
  • 2Slice lengthwise into fourths.
  • 3Butter a shallow microwave-safe baking dish.
  • 4Dip potato slices first into the egg, then into the crumbs to coat.
  • 5Place the slices in the baking dish.
  • 6Top with any remaining crumbs.
  • 7Dot with a tablespoon of butter, if desired.
  • 8Microbake on 100% power 3-5 minutes, or until potato is tender and batter is set.
  • 9If desired, top with the slice of cheese and microwave 1 minute more to melt.
  • 10Sprinkle with seasonings.
