breakfast baked potatoes

Just adopted this recipe, will be making it soon and letting you know what I think! and will post pictures!

Ingredients For breakfast baked potatoes

  • 2 sm
    potatoes
  • 1
    egg, fork beaten with a little milk
  • 2 slice
    toast, crumbled
  • 1 slice
    cheddar or processed cheese
  • salt and pepper to taste
  • garlic powder to taste

How To Make breakfast baked potatoes

  • 1
    Scrub potatoes, but do not peel.
  • 2
    Slice lengthwise into fourths.
  • 3
    Butter a shallow microwave-safe baking dish.
  • 4
    Dip potato slices first into the egg, then into the crumbs to coat.
  • 5
    Place the slices in the baking dish.
  • 6
    Top with any remaining crumbs.

    Dot with a tablespoon of butter, if desired.

    Microbake on 100% power 3-5 minutes, or until potato is tender and batter is set.

    If desired, top with the slice of cheese and microwave 1 minute more to melt.

    Sprinkle with seasonings.
