brandy's creamy twice baked potato's

I love twice baked potato's so I thought I would put a little spin on my version.

yield 18-20 potato halves

Ingredients

  • 8-10 - potatoes
  • 8 ounces mayonnaise
  • 16 ounces whipped cream cheese
  • - cheddar cheese, shredded
  • - bacon bits (optional)

How To Make brandy's creamy twice baked potato's

  • Step 1
    Set oven on 400 Degrees and let Potatoes bake for 45 minutes or until fork slides easily in and out of Potatoes.
  • Step 2
    Let Potatoes cool for a few minutes. When Potatoes are cool, scoop inside of Potatoes out into a bowl and mix Cream Cheese, Mayonnaise and Potato together.
  • Step 3
    Take each Potatoe skins and fill them up with the mixture. Sprinkle Cheddar Cheese and Bacon Bits (Optional) on top.
  • Step 4
    Put back into oven and bake them for 15 minutes or until cheese is melted and filling is hot, Enjoy! (Caution: Filling will be HOT!)
