bourbon mashed sweet potatoes

I wanted to try something different with the sweet potatoes - something easy to do on a weeknight - and this is it! Very easy to put together and even more excellent when paired with the http://www.justapinch.com/recipes/main-course/chicken/chicken-with-smoked-paprika-and-bourbon.html I made up to go along with it! Adapted from Simply Recipes.

Ingredients

  • 2 pounds garnet sweet potatoes, peeled, cut into 1-inch cubes
  • 4 tablespoons butter
  • 3 tablespoons bourbon or whiskey (i used pendleton)
  • 2 tablespoons brown sugar, more or less to taste
  • 1 teaspoon vanilla

How To Make bourbon mashed sweet potatoes

  • Step 1
    Prepare sweet potatoes and place them in a deep pot. Fill with water to cover, toss in a bit of salt and bring to a boil over medium high heat. Boil until tender, 15-20 minutes.
  • Step 2
    Remove from heat and drain water from potatoes. In the same pot, add butter and bourbon. On the counter, cover the pot for 5 minutes to let the butter melt.
  • Step 3
    Remove cover and add brown sugar. Use a potato masher to incorporate ingredients and to mash potatoes. Add vanilla and continue to mash until desired consistency.
  • Step 4
    Adjust to taste with more bourbon, butter or brown sugar. Drool. Enjoy!
