These are really called Pennsylvannia Dutch Potato Fritters but they call them Boofers for short. Again my son loved them and so did his friends.

Ingredients
- 2 cups grated raw potato
- 1 small grated onion
- 1 large egg, beaten
- 1/4 teaspoon salt
- 1 dash pepper
- 1 tablespoon chopped parsley
- 1/2 teaspoon baking powder
- 4 tablespoons all purpose flour
How To Make boofers

Step 1Place potatoes in a strainer to drain off all liquid. Add onion, egg, salt, pepper, parsley, baking powder, and flour. Mix well. Drop by teaspoonfuls into deep hot fat and fry 5 minutes. Drain on paper towels.
