These are really called Pennsylvannia Dutch Potato Fritters but they call them Boofers for short. Again my son loved them and so did his friends.

2 cgrated raw potato

1 smgrated onion

1 lgegg, beaten

1/4 tspsalt

1 dashpepper

1 Tbspchopped parsley

1/2 tspbaking powder

4 Tbspall purpose flour
How To Make boofers

1Place potatoes in a strainer to drain off all liquid. Add onion, egg, salt, pepper, parsley, baking powder, and flour. Mix well. Drop by teaspoonfuls into deep hot fat and fry 5 minutes. Drain on paper towels.
