This is one of our family's holiday favorites and has been for many years. My Mother made this & has passed it down & I make it, as well as my daughter. Someone is always looking for the sweet potato souffle. A melt in your mouth side dish & you'll go back for more!!!

Ingredients

  • MAKE RITZ CRACKER CRUST FIRST
  • 2 cups ritz crackers (crushed)
  • 1 stick butter, melted
  • SWEET POTATO FILLING
  • 6 medium sweet potatoes (cooked & peeled) * i boil my potatoes on low heat until done, about an hour . cool & then peel.
  • 1 stick melted butter
  • 1 cup sugar
  • 1/2 cup evaporated milk
  • 1 teaspoon vanilla extract
  • CREAM CHEESE FILLING
  • 8 ounces cream cheese
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • TOPPING
  • 1 medium container of cool whip
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

How To Make bj's sweet potato souffle

  • Step 1
    Crush crackers & mix with melted butter. Press in the bottom a (6x9) glass dish.
  • Step 2
    For the sweet potato filling: mix all 5 ingredients together with electric mixer until very light, smooth, & creamy. Pour this over cracker crumb filling.
  • Step 3
    For the cream cheese filling: mix all 3 ingredients together and mix until smooth & creamy. Spread this over sweet potato filling. * Add enough evaporated milk to give it a spreadable consistency.
  • Step 4
    For topping: mix cool whip with powdered sugar & vanilla. Spread this over cream cheese filling.
  • Step 5
    Cover with plastic wrap & refrigerate for a few hours or over night.
