Balsamic Roasted Red Potatoes
2 Tbspolive or canola oil
2 lbsmall red potatoes quartered
2 Tbspcrushed garlic, or 6 garlic cloves crushed
1 Tbspchopped green onion
1 tspdried thyme
1 tspdried crushed rosemary
1/8 tspground nutmeg
1/4 cbalsamic vinegar
How to Make Balsamic Roasted Red Potatoes
- In a large nonstick skillet, heat oil over medium heat.
add potatoes, onion,and garlic, toss to combine
- Add the thyme, rosemary and nutmeg toss well cook and stir 2-3 minutes or until potatoes are hot
- Transfer to a 15-in x 10-in baking pan that has been coated with non stick cooking spray
- Bake at 400 degrees for 25-30 minutes or until potatoes are almost tender.
add the vinegar, salt and pepper and toss well, bake 5-8 minutes longer or until potatoes are tender
