Ingredients
- 1 large baking potato
- 1/4 cup chopped red onion( medium diced)
- 1/4 cup chopped bell pepper( medium diced)
- 1 clove garlic minced or 1tbs garlic powder
- 1/2 cup balsamic vinegar
- 1/4 cup olive oil, extra virgin
- - kosher salt
- - coarse ground black pepper
How To Make kat's balsamic roasted potatoes

Step 1wash potato and slice length wise in half, make 3 slices out of each half and then dice into 1 1/2 in chunks, in an oven proof skillet ( i used my iron skillet and put a piece of heavy foil in, easy clean up and i just made a pouch with the foil before putting in oven)

Step 2add oil to hot skillet, then add onion, pepper, garlic and potatoes, add some coarse ground black pepper and kosher salt, stir around then add balsamic vinegar, cook on stove stop for about 5 minutes, cover with foil and put in a 350 degree oven for 35 minutes
