Looking for something different to do with your potatoes? Try this! PS you can do these on the grill also, just lay down a piece of heavy duty foil and arrange potato wedges on the foil.

Ingredients

  • 2 tablespoons olive oil
  • 2 - minced garlic cloves
  • 1 tablespoon minced fresh rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 pounds red potatoes cut into wedges
  • 1/2 cup balsamic vinegar

How To Make balsamic potatoes

  • Step 1
    Combine first 5 ingredients in a large bowl, and stir well.
  • Step 2
    Add potato wedges, tossing gently to coat.
  • Step 3
    Arrange potato wedges in a single layer on a lightly greased baking sheet.
  • Step 4
    Bake, uncovered, at 450 degrees for 30 minutes.
  • Step 5
    Remove potatoes from oven; sprinkle with balsamic vinegar.
  • Step 6
    Bake 10 more minutes. Serve immediately. Yield: 4 servings.
