Another family favorite that is easy to make and a change up from the norm of a potato.

Ingredients

  • 5 medium
    potatoes, sliced thin
  • 2
    onions, sliced thin
  • 1/4 c
    butter
  • 1/2 c
    olive oil
  • 1 Tbsp
    thyme
  • 1 Tbsp
    garlic, chopped
  • 1 tsp
    salt (adjust to taste)
  • 1/2 tsp
    pepper

How to Make Baked Thyme Potatoes and Onions

Step-by-Step

  1. Scrub potatoes (no need to peel, I leave the skins on)and slice thin.
  2. Peel onions and slice thin.
  3. Layer potatoes and onions in a 9 x 13 pan.
  4. In a microwave safe measuring cup or small bowl, combine remaining ingredients and heat for 1 minute or until butter is melted. Pour over the potatoes and onions.
  5. Cover with aluminum foil and bake for 1 hour or until potatoes are tender.
